Description
Pepper grows on a shrub like plant and we offer three varieties – black, red and white. All are harvested by hand. Black peppercorns being the most common and are harvested as green fruit, sun dried and then hard sorted to select only the best peppercorns. Peppercorns that are too small or cracked in the harvesting process are rejected. Any peppercorns that have turned red are left on the vine for up to four months to yield a sweeter pungency that is delightful. The white peppercorns undergo further hand processing and are therefore much more sought after as they have unique flavour differences and due to their scarcity are correspondingly more expensive.
